Because the River Soar to the top, the eagle is a symbol of resurrection and ascension of Christ. By extension, the eagle symbolizes baptized Christians who have died with Christ and symbolic rose. Especially when the eagle has a halo (as in photo above), the symbol of John the Evangelist. John is the eagle because of its noble and "high" gospel (which is much more theological in nature than the other three).
